Pick of the Week: Fava Beans

It's fava bean season again! Not only do these buttery textured legumes taste of spring, they are also nutritional powerhouses: high in both iron and fiber and low in fat and sodium. Visit the Monica’s table to get the first favas of the season at the Tuesday or Saturday markets.

Tuesday’s Green Plate Special

This month we welcome Café Hope, a project of Catholic Charities that trains at-risk young adults for work in the restaurant and hospitality industries. This week, their menu includes: Briarhill Farm Chicken & Okra Gumbo w/ Cajun Grain rice, Lafitte Crab Cake & Black Eyed Pea Salsa, Veggi Farmer’s Cooperative Mixed Green Salad with Veggie Farmer’s Co-op and Tofu & Blood Orange Vinaigrette. And don’t forget dessert: French Yogurt Cake & Strawberries. Yum!!

Every Saturday, Grow Dat Youth Farm samples an easy dish made with their produce. Last week, they made pesto using radish greens. This is a great way to use the excess leaves after you enjoy those spicy radishes! Bonus: radish leaves are a great source of calcium and vitamin C.
