Healthy Snacking with CCFM | Week of September 2, 2013 |
Fresh & LocalThis Saturday is our September Marketeers Activity and we will be learning about healthy snacking, just in time for back to school! Join us as we learn the differences between cheez-its and fresh cheese, fruit roll-ups and fruit, and the joy of eating healthy, fresh foods for snacks and meals. Healthy snack tastings and recipe cards while supplies last! Our Marketeers Club is open to all children under the age of 16; come get signed up if your child isn’t already! |
Pick of the Week: Lima Beans!Indian Springs Farmers Cooperative has all sorts of lovely shelled beans and peas and limas are some our favorites. Also called butter beans, these little legumes are crazy nutritious and at least as delicious. High in fiber, low in calories, and a great sugar-stabilizing form of energy, we can’t get enough. Pro-tip: buy more than you need and store them in your freezer! A look inside some of market staff freezers will show what bean hoarders we tend to be this time of year. Look for Indian Springs Farmers Cooperative most Tuesday, Thursday, and Saturday market days. |
Tuesday’s Green Plate SpecialThis week we welcome food truck Rue Chow to the Green Plate Special tent. This roaming food truck will be offering up Korean BBQ Chicken pita, local duck liver pâté with toast points and jam; smoked pork loin sandwich with local fig jam, garlic butter fries, kale salad with lemon Greek yogurt dressing, shaved carrots, radishes, onions, and toasted almonds and dessert for market shoppers to enjoy. Next week La Cocinita joins us with their big red truck! |
Recipe of the WeekThis recipe for Caldo Augustina comes to us from local celebrity chef John Besh, who named the dish for his award-winning Restaurant August. Caldo is the quintessential soup of the Islenos, immigrants originally from the Canary Islands who have populated southern Louisiana since 1778. Visit Chefs John Besh and Brian Landry's Borgne to taste more Islenos and coastal Louisiana inspired cooking. |
