Ingredients
- 2 cups okra sliced
- ½ cup buttermilk
- ½ cup all-purpose flour
- ½ cup yellow cornmeal
- 1 tsp seasonal salt
- 1 tsp black pepper
- ¼ cup extra virgin olive oil
Directions
- Preheat the oven to 475 degrees F.
- Line a baking sheet with aluminum foil. Pour the olive oil onto a baking sheet, and make sure all the surfaces are covered. Sprinkle the okra liberally with seasoned salt & black pepper before setting aside.
- Combine the flour, cornmeal, salt & pepper in a bowl. Pour the buttermilk into another bowl.
- Working in small groups, transfer okra into the buttermilk, allowing a few moments to soak before moving into the flour & cornmeal mix. Coat okra pieces completely in mix, then move to baking sheet.
- Continue process until all okra is breaded & placed on baking sheet.
- Bake for 15 minutes, flip, place back in over for additional 10 minutes.
- Transfer to a paper towel-lined plate, and then serve warm.
