Blueberry Overnight Oatmeal
It’s finally blueberry season y’all! As much as well love eating blueberries straight out of the container, they’re also a great addition to all sorts of recipes. Try this recipe by Southern Living for overnight oatmeal to make your mornings easy. Pick up some bluebs and Stacy’s oats from the Uptown market, prepare it the night before and grab your jar as you walk out the door. Quick, healthy and delicious!
- 1/2 cup Regular rolled oats, uncooked
- 1 cup 2% reduced-fat milk
- 1/4 cup Fresh blueberries
- Dash Cinnamon
- pinch salt
- 1 tablespoon Toasted pecans, chopped
- 1 teaspoon Flax seeds
- Pure maple syrup
Place 1/2 cup uncooked regular rolled oats, 1 cup 2% reduced-fat milk, 1/4 cup fresh blueberries, a dash of cinnamon, and a pinch of salt in a 1-pint canning jar. Cover with lid, and shake to combine.
Chill until the oats are tender and moist, about 8 hours. Remove from refrigerator; uncover and microwave on HIGH until warmed, about 3 minutes. Stir in 1 Tbsp. chopped toasted pecans and 1 tsp. flax seeds.
Drizzle with honey or pure maple syrup; serve immediately.
