Spring Harvest Salad
Welcome the freshness of spring with this delightful Spring Harvest Salad. Roasted Brussels sprouts and tender squash meet crisp kale and juicy apple slices, creating a harmony of flavors and textures. Topped with toasted pecans and Parmesan shavings, this salad is a celebration of the season's bounty. Drizzled with a citrus-infused vinaigrette, it's a perfect addition to any springtime meal, bringing a burst of flavor to your table.
Ingredients
- ¼ cup fresh orange juice
- 1 small shallot, minced (~2 tbsp.) - River Queen Greens
- 1 tbsp. distilled white vinegar
- 1 tbsp. pure maple syrup
- 1 tbsp. Dijon mustard
- 2 ½ tsp. kosher salt, divided
- ½ tsp. black pepper, divided
- ⅓ cup + 2 tbsp. extra-virgin olive oil, divided
- 1 ½-lb. winter squash, seeded and cut into 2-in.-long x ¾-inch-wide wedges
- 1 lb. fresh Brussels sprouts, trimmed and halved lengthwise - Monicas Okra World, Isabel's Tamales and Produce
- 2 bunches Lacinato kale, stemmed and chopped (~12 cups) - Monicas Okra World, Isabel's Tamales and Produce, Poche Family Farm, River Queen Greens, Veggie Co-Op
- 1 medium Honeycrisp apple, thinly sliced (~1 ½ cups)
- ½ cup toasted pecans, chopped - Indian Springs
- 1 oz. Parmesan cheese, shaved (~½ cup)
Directions
- Preheat the oven to 450°F. Whisk orange juice, shallot, vinegar, maple syrup, mustard, 1 ½ tsp salt, and ¼ tsp pepper in a small bowl. Gradually, whisk ⅓ cup olive oil at a time until smooth and combined. Set aside.
- Toss together squash, Brussels sprouts, and remaining 1 tsp salt, ¼ tsp pepper, and 2 tbsp olive oil on a large baking sheet. Roast for 20 minutes in a preheated oven, rotating the baking sheet halfway through.
- For one minute, massage kale and ¼ cup vinaigrette in a large bowl with your hands until softened. Toss apples and roasted vegetables. Transfer to platter. Sprinkle it with pecans and Parmesan. Drizzle remaining vinaigrette.
NOTES
Buy the fresh bulk sausage, but if you buy the fresh sausage in links simply slice open and remove the sausage from the casing. For stuffing, do not peel the squash, and remember not to scoop the cavity too deep and tear the exterior of the squash.
