Stir Fried Pumpkin

Pumpkins can be spooky, but not this kind! It’s only September after all. With white pumpkins that recently hit the market, you can whip up this easy stir fry with any of your favorite aromatics and seasonings. You can make it savory with garlic and soy sauce, or spicy with lemon and cayenne pepper.

Ingredients
  • 4 cups pumpkin cubed 
  • 1 tbsp cooking oil 
  • 1 tbsp minced garlic 
  • 1 cup water 
  • ½ tbsp light soy sauce 
  • 1 tsp sugar 
  • Salt & pepper to taste 
  • Chopped green onions 
Directions
  1. Wash & peel pumpkin skin. Cut them into bite-sized pieces. 
  2. Heat a large deep frying pan over medium high heat & add cooking oil.
  3. Stir-fry minced garlic until fragrant, about 20 seconds. Gently add the pumpkin pieces. 
  4. Stir Fry the pumpkin until it achieves a golden-brown color, approximately 2-3 minutes. Pumpkins should be tender not mushy. 
  5. Add 1 cup water, light soy sauce & sugar to the pan. Toss the pumpkin in the sauce, ensuring it is evenly coated. 
  6. Cover the pan & simmer on low heat for 5-8 minutes or until the pumpkin is soft, salt & pepper to taste. 
  7. Garnish with green onion and enjoy.
