Zesty Satsuma Salad
As satsumas make their vibrant debut at the market, it's the perfect time to enjoy a bright and zesty Satsuma Salad! This refreshing dish combines the sweet juiciness of satsumas from L’Hoste Citrus, the rich flavor of honey from Powers Beekeepers, and the aromatic touch of basil from VEGGI Co-op. With these fresh ingredients (all at the Tuesday market this month!), you can whip up a salad that’s as flavorful as it is simple to prepare!
Ingredients
- Zest of ½ lime
- Juice of 1 lime (2tbsp)
- 1 tsp honey
- 1 tbsp extra virgin olive oil
- ⅛ tsp salt
- 1 tbsp finely chopped basil, washed & dried
- 5-6 satsumas
- Freshly ground pepper
Directions
- Make the dressing by combining zest, lime juice, honey, basil, shallots & salt in a bowl, then add the oil & whisk.
- Peel the satsumas & slice horizontally into ¼ inch thick slices.
- Either mix the satsuma slices into dressing or arrange on a platter & drizzle the dressing & top with freshly ground black pepper.
