Grapefruit & Goat Cheese Salad
This Grapefruit and Goat Cheese Salad is a light, tangy, and flavorful dish that balances citrus and creaminess in every bite. The juicy grapefruit pairs perfectly with the smooth goat cheese, while fresh greens add a crisp base. Tossed in a simple vinaigrette, this salad is a refreshing option for any occasion.
Ingredients
- 1 medium grapefruit
- 1 tbsp olive oil
- Salt & pepper to taste
- 2 cups baby spinach
- ⅔ cup cooked farro or quinoa
- 2 oz goat cheese, crumbled
- Pecans
- Thyme or herb of choice
Directions
- Remove skin & pith from grapefruit
- Separate grapefruit segments & squeeze any remaining juice into a bowl. Transfer segments to another bowl & set aside.
- Add olive oil to juice, season with salt & pepper, & whisk vigorously to make a vinaigrette.
- Add spinach, cooked farro or quinoa, & grapefruit segments & toss to coat. Top with goat cheese, thyme, & pecans.
