  • 3 lb. large potatoes (4–6), preferably russet
  • 1 lb. yellow onions (about 2 medium)
  • 1/4 cup fine plain dried breadcrumbs
  • 3 1/2 teaspoons kosher salt
  • 2 teaspoons baking powder
  • 1/4 teaspoon freshly ground black pepper

  5. Drain on paper towels, then keep warm in the oven.
  6. Serve with applesauce and sour cream.
