Savory Southern Bloody Mary
Save the potlikker (the liquid that is "left behind" from cooking a pot of greens) from your holiday dishes to be used as a broth in beans, hams, and even a bloody mary! Ring in the new year with the hero of all brunch cocktails with this savory, southern Bloody Mary. If you haven’t made greens, you can always cook down any broth instead!
Ingredients
- 2 cups cold potlikker (for example, reserved from Double-The-Potlikker Greens)
- 1 cup vegetable juice (such as V8)
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. fresh lime juice
- 2 tsp. whole-grain mustard
- 1 tsp. liquid from peppers in vinegar, plus peppers for garnish
- 3/4 tsp. garlic salt
- 1/2 tsp. black pepper
- 3/4 cup (6 oz.) vodka
- Ice
- Cocktail onions
- Collard greens (reserved from Double-The-Potlikker Greens)
Directions
- Remove and discard any fat that has risen to the top of cold potlikker. Bring potlikker to a boil in a medium saucepan over high. Cook, undisturbed, until reduced by half and concentrated in flavor, about 15 minutes. Remove from heat, and let cool to room temperature, about 45 minutes. Cover and refrigerate until ready to use.
- Place concentrated potlikker, vegetable juice, lemon juice, lime juice, mustard, liquid from peppers in vinegar, garlic salt, and black pepper in a small pitcher; stir until well combined. Stir in vodka.
- Fill 2 (16-oz.) glasses with ice, and pour vodka mixture evenly into each glass. Garnish each glass with a pick threaded with pickled peppers in vinegar, cocktail onions, and collard greens.
