Thursday Market is operating within its regular hours of 3pm to 7 pm to accommodate the return of Daylight Saving.

Sweet Potato Bread
There are so many great ways to enjoy sweet potatoes—grilled, mashed, french fried, candied, and even used to make bread! Sweet potato bread is moist, dense, and sweet, making it an excellent breakfast bread. Filled with warm spices and buttery pecans, this bread pairs well with coffee or tea. Find sweet potatoes and pecans at the Indian Springs Farmers’ Association table at the Tuesday Uptown and Thursday Mid-City markets, and enjoy this yummy recipe for meals to come!

Ingredients
- 1 1/2 cups self-rising flour
- 1 cup sugar
- 1 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 1/2 cup vegetable oil
- 2 tbs milk
- 2 eggs, slightly beaten
- 1 cup mashed cooked sweet potatoes
- 1 cup chopped pecans
Directions
Heat oven to 350°F. Grease the bottom of an 8x4-inch loaf pan. In a large bowl, mix flour, sugar, nutmeg, and cinnamon.
Add oil, milk and eggs & mix. Stir in sweet potatoes and pecans.
Pour in pan and bake for 1 hour 15 minutes.
Cool in pan for 15 minutes. Remove from pan to cooling rack. Cool completely, about 1 hour.
