Rosemary Parmesan Potatoes with Spicy Truffle Dip

This dish brings together parmesan cheese and truffle oil over a crowd-pleasing base: potatoes! It’s simple enough to be a great introduction to truffle oil for those that have yet to try it. Plus, what better way to honor the creativity behind Micro Pharms products than to incorporate it into one of his own recipes? Lightly mashing the potatoes is a fun-looking kitchen technique that may bring some helpers into your kitchen. Micro Pharms truffle oil in the dip makes these potatoes a spotlight-stealing side dish or even a meal on its own!

Ingredients

  • Baby gold potatoes
  • Rosemary
  • Parmesan
  • Garlic Powder
  • Olive Oil

Dip

  • Mayo
  • Honey
  • Soy sauce
  • Micro Pharms Truffle Chili Oil

Directions

First, boil potatoes in a pot with water and salt.

To make the dip, mix mayo, honey, soy sauce, and Truffle Chili Oil.

Then, combine rosemary with parmesan and garlic powder. Add olive oil until mix forms a loose paste-like consistency.

Transfer fully cooked potatoes to a parchment-lined baking sheet. Smash each potato with the bottom of a glass and top with the rosemary parmesan mix.

Sprinkle parmesan over potatoes and cook in the oven for 15 minutes.
