Super Greens Sandwich
Microgreens are SUPERfoods! This means they are nutrient-dense, so you only need to eat a little bit to receive health benefits. Microgreens are loaded with vitamins and antioxidants to give your immune system a boost. The fiber aids in digestion and can help you feel fuller longer. This sandwich has only a few ingredients but the microgreens bring the flavor to the next level with nutty and earthy tones. This quick and easy lunch is crunchy, cool, and packs a nutrient punch.
Ingredients
- 2 slices of bread
- 3 Tbsp Avocado Sauce:
- 1 ripe avocado, peeled and pitted
- 1 ½ tsp lemon or lime juice, plus zest
- 1 tsp olive oil
- Sprinkle of salt, to taste
- Fresh ground black pepper
- ½ cup tightly packed baby spinach
- One small cucumber cut into thin slices
- 3 slices provolone cheese
- ½ cup microgreens or sprouts
Directions
To make the avocado sauce: add the avocados, juice, and zest to the bowl of a food processor or blender. Pulse and slowly drizzle in one teaspoon of oil until smooth. Scrape the sides as needed to make sure it's all combined. Add salt to taste.
Divide avocado sauce equally between each slice of bread, and spread. Sprinkle each slice with freshly ground black pepper.
Assemble the sandwich with spinach, cucumber slices, provolone cheese, and microgreens.
