Blood Orange Salad & Vinaigrette
With blood oranges hitting the market, this vibrant salad and vinaigrette is a quick, refreshing way to celebrate the season! Their sweet-tart flavor pairs perfectly with fresh greens and a zesty homemade dressing.
Ingredients
- 4 oz mixed spring greens
- 2 medium blood oranges
- ½ cup cherry tomatoes
- 3 tbsp mozzarella
- 2 tbsp toasted walnuts
- ¼ cup blood orange juice
- 1 tsp blood orange zest
- 2 tbsp red wine vinegar
- ⅓ cup extra virgin olive oil
- 1 tsp honey (optional)
- 1 tsp dijon mustard
- Salt & pepper to taste
Directions
- Zest the orange & juice. You will need ¼ cup blood orange juice.
- Slice top & bottom of orange & peel. Slice oranges & separate into segments. Remove seeds if any.
- Add ¼ cup orange juice, zest, vinegar, olive oil, honey, dijon mustard, salt & pepper to taste to a bowl & mix well until emulsified.
- Dry the greens, add 2-3 tbsp of vinaigrette & toss greens gently with hands.
- Transfer to serving platter, place blood orange slices, sprinkle nuts, cheese & other ingredients.
- Drizzle more dressing & serve immediately. Only dress when ready to serve. Enjoy.
