Black-Eyed Pea Salad

While Fergie has yet to be seen, black-eyed peas have hit the market! With black-eyed peas from Johndales Farm, cherry tomatoes from Monica’s Okra World, and seasonings from Sassy Cajun Spices - whip up this nutritious black-eyed pea salad for your next lunch!

Ingredients
  • 2 cups cooked black-eyed peas 
  • 1 cup cherry tomatoes, halved 
  • ½ cup red onion, finely chopped
  • 1 green bell pepper, diced
  • 1 cup cucumber,  diced
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil 
  • 2 tbsp red wine vinegar
  • 1 tbsp dijon mustard
  • 1 tbsp lemon juice 
  • Salt & pepper to taste
Directions
  1. In a large bowl, combine the black-eyes peas, cherry tomatoes, red onion, bell pepper, cucumber, & parsley. 
  2. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, dijon mustard, salt & pepper. 
  3. Pour the dressing over the salad & toss to combine. 
  4. Let the salad sit for at least 30 minutes to allow the flavors to meld. 
  5. Serve chilled, top with feta cheese crumble or avocado slices if desired.
