Black-Eyed Pea Salad
While Fergie has yet to be seen, black-eyed peas have hit the market! With black-eyed peas from Johndales Farm, cherry tomatoes from Monica’s Okra World, and seasonings from Sassy Cajun Spices - whip up this nutritious black-eyed pea salad for your next lunch!
Ingredients
- 2 cups cooked black-eyed peas
- 1 cup cherry tomatoes, halved
- ½ cup red onion, finely chopped
- 1 green bell pepper, diced
- 1 cup cucumber, diced
- ¼ cup fresh parsley, chopped
- ¼ cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp dijon mustard
- 1 tbsp lemon juice
- Salt & pepper to taste
Directions
- In a large bowl, combine the black-eyes peas, cherry tomatoes, red onion, bell pepper, cucumber, & parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, dijon mustard, salt & pepper.
- Pour the dressing over the salad & toss to combine.
- Let the salad sit for at least 30 minutes to allow the flavors to meld.
- Serve chilled, top with feta cheese crumble or avocado slices if desired.
