Loaded Potato Skins

Potato skins, but with a twist! Our program coordinator, Amanda, loves baking sweet potato skins using fresh and local sweet potatoes from CCFM vendors. Keep reading to find out how to make this tasty appetizer in your kitchen!

Ingredients

  • 4 sweet potatoes, scrubbed clean
  • Olive oil
  • Sea salt
  • ¼ cup plain yogurt (sub dairy-free if needed)
  • 2-4 tablespoons hot sauce
  • ½ cup black beans, drained and rinsed
  • Cilantro for garnish
  • Optional Toppings
    • Cabbage slaw
    • Spring Onions
    • Salsa + Lime

Directions

Preheat the oven to 350 F. Rub your potatoes with olive oil and sprinkle them with salt. Bake directly on the oven rack for 45 minutes or until easily pierced by a fork.

Once cooled, cut in half and scoop out the insides leaving a small edge of potato next to the skin.

Put the skins cut side down on a baking sheet and stick them in the oven while you prep the rest. This keeps them warm and gives them an added layer of crispiness.

Mix the potato with the yogurt and hot sauce until well combined. Add the beans and mix well.

Take the skins out of the oven and stuff them with the mixture.

Bake again for about 10-15 minutes. Top with anything you desire and eat while warm!
